These make lovely buffet and party finger foods.
The meat should be minced twice if possible, or turned to a paste in a food processor. Mix all the ingredients together and knead well with your hands to a soft, pasty texture. Roll into small walnut-sized balls. Fry in oil, in a few batches, turning them so that they are well browned all over but still moist and juicy.
Serve hot or cold.
