Lentils with Peppers and Tomatoes

  • 500 g (1 lb) brown or green lentils
  • 3–4 tablespoons


Soak the lentils in cold water for at least an hour. Drain and boil in fresh water for about 20 minutes until tender. Fry the onion in the oil in a large saucepan until golden. Add the pepper and chillis and sauté until softened. Add the drained lentils and tomatoes, salt and pepper and cook gently for about 15 minutes, adding the chopped herbs towards the end of the co
