Recipes for rishta, an Italian-type pasta, appeared in the early Arab manuscripts. The word itself means ‘thread’ in Persian. Today pastas of all kinds are becoming increasingly popular all over the Middle East.

Here is the basic recipe for plain rishta.

Ingredients

  • 500 g (1 lb) plain flour
  • 2 large eggs, beaten

Method

Sift the flour on to a large board or marble slab and make a little well in the centre to hold the beaten eggs, salt and 4 tablespoons water. Bury these in the flour. Mix well and knead vigorously until all the ingredients are thoroughly blended, adding the remaining tablespoon of water only if nece
