  • 500 g (1 lb) new potatoes, diced raw
  • 3–4 tablespoons olive oil


Fry the diced potatoes in olive oil until crisply cooked. Add the chillis, salt and garlic and cook for a minute or two. Add the coriander and cook gently, stirring until it wilts.
