Mashed Potatoes with Pine Nuts

  • 1 kg (2 lb) potatoes
  • 2 tablespoons oil


Wash and boil the potatoes. Fry the onion in oil till golden, add the pine nuts and let them brown. Peel and mash the potatoes, beat in butter and milk and season with salt and pepper and spices. Serve with the onion and pine nuts on top and a sprinkling of parsley.
