Stuffed Courgettes with Apricots

Although a family favourite, this is not an Egyptian dish. It may have drawn its inspiration from medieval Persian dishes in which apricots were cooked together with meat and vegetables. However, Iranians today do not seem to know this most excellent variation of stuffed courgettes.</
