Although this is not a pickle, I am including the recipe in this chapter since it is a very useful sauce to have at hand when required, and it can be prepared in advance and stored in jars.
Skin the tomatoes by throwing them into boiling water for a minute or two to loosen their skins. Alternatively, hold them on a fork over an open flame until the skin bursts and blisters. They can then be skinned easily. Quarter them.
