  • 1 large onion, finely chopped
  • 500 g (1 lb) fresh shelled or frozen broad beans


Heat 2 tablespoons oil in a large, heavy pan and fry the onion until soft and golden. Add the broad beans and sauté a little, turning them over and stirring. Cover with a little water and season to taste with salt and pepper. Simmer until the beans are tender.
