  • 1 large roasting chicken
  • 2 tablespoons oil
  • Salt and black pepper


Clean and wash a large fat chicken. Colour it gently in hot oil, turning it so that it becomes golden all over. Add water to cover, and season to taste with salt, pepper and a teaspoon of your favourite herbs. Bring to the boil and simmer until the chicken is very tender (usually about 1 hour). Let the chicken cool a little before taking it out of the stock.
