Many dishes in which the rice is cooked over meat and vegetables in a large saucepan and then turned out without disturbing the layers are Palestinian favourites. I have received many recipes using a variety of different vegetables and have chosen two. The first arrived in a letter.

Ingredients

  • 2 large onions, chopped
  • Oil
  • 500 g (1 lb) lamb

Method

Fry the onions in 3 tablespoons oil until soft, add the meat and brown all over. Cover with water, add seasoning and cook till the meat is tender (½ to 1 hour). Separate the cauliflower into florets. Cut the aubergines into slices, sprinkle with salt and let the juices run for about an hour. Peel th
