A rich and delightful Turkish speciality. Chicken livers can be used instead of goose livers.


  • 2 teacups (500 g/1 lb) long-grain rice

Wash the rice as described. Heat 2 tablespoons of the butter in a frying pan. Fry the livers until just coloured and remove. Season them to taste with salt, pepper, and a little ground allspice if liked. Toss well and reserve. In the same fat, fry the spring onions
