This compote can be made with any fresh fruits that are in season, and in various combinations to suit individual taste. I have listed more fruits than are needed for 6 portions. They will not all be in season at the same time, so use those that are available.
Make a syrup by boiling water with half its volume of sugar and lemon juice to taste, allowing it to simmer for about 10 minutes.
Wash, peel, core and slice all the fruit, and remove stones where necessary. Put the sliced fruit in a large pan with the syrup, bring to the boil gently and simmer for about 15 minutes, or until they are all soft. Chill and serve cold, with thick cream or st
