  • 1 teacup cornflour
  • 8 teacups water
  • 1–2 teacups

Method

Mix the cornflour to a smooth paste with a little of the water in a large pan. Add the rest of the water and the sugar, and stir vigorously with a wooden spoon until dissolved. Bring to the boil slowly, stirring. Lower the heat and simmer gently, stirring constantly, until the mixture thickens. An asbestos mat will help prevent the pudding from burning. To test if it is ready, dip a spoon in th
