A brilliantly white milk ice cream made with the starch of a root called sahlab (sold under the name of saleb in Britain), and flavoured with mastic and orange blossom water. Its creamy, slightly elastic texture comes from the mastic, a hard resin which, when softened with ordinary candle wax, becomes the Middle Eastern chewing gum.
