Method

Beat the egg yolks with sugar until thick and lemon-coloured. Add coconut and flavouring, and mix well. Fold in the stiffly beaten egg whites and pour into a buttered and floured cake tin. Bake in a preheated moderate oven (180°C/350°F/Mark 4) for about 45 minutes
