These are the simplest to make, and my favourites.


  • 1 teacup ground almonds
  • 1 teacup sifted icing sugar
  • 4–6


Mix the ground almonds, icing sugar and enough orange blossom water to make a stiff paste; knead by hand until smooth. Let the paste rest for a few minutes. Wash and dry your hands, and shape the paste into little balls the size of large marbles. Roll them in icing sugar. Decorate if you like with halved almonds or pistachio nuts embedded in the top of the balls. Serve in individual little pape
