Make a firm paste by mixing the ground almonds, caster sugar and orange blossom water together thoroughly. Add more orange blossom water if necessary, to bind the paste. Squeeze about 1 teaspoon of the paste between two walnut halves. Place these on a cold oiled surface.

Make a little caramel by heating and stirring the granulated sugar until it melts and turns a light brown colour. Pou
