An exquisite preserve which is particularly good made with bitter orange peel. As orange peel keeps well in any tightly closed container in the refrigerator, you can collect it gradually. Choose thinskinned oranges. Rub lightly with a grater to remove some of their bitterness, then peel in six strips.
Boil the peel in water for about ½ hour, until soft. Drain well and soak in a fresh portion of cold water for a day if using the peel of ordinary oranges, changing the water once or twice if possible. If using bitter orange peel, it should be left to soak for 4 days and the water should be changed twice a day.
If the peel is very pithy, scrape some of the white pith away with a soup spo
