  • 1 tablespoon lemon juice

Peel the pumpkin and discard the seeds. Grate the flesh in thick shreds. Weigh the grated flesh.

Make a syrup with the same weight of sugar as grated pumpkin, half this volume of water, and the lemon juice. Bring to the boil stirring, and simmer gently until the syrup is thick enough to coat a spoon thickly. Stir in the grated pumpkin, and continue to simmer until it is soft and transpa
