This bread tastes just as delicious today as it did over a hundred years ago and it deserves to be much better known. I’ve made it over and over again since Mrs McGillycuddy from Caragh Lake in County Kerry first showed me how to make it. I’ve also heard it referred to as ‘yalla male’ bread. This tradition dates back to Famine times, when cornmeal was imported into Ireland to help alleviate starvation. Other recipes from West Cork use equal quantities of yellowmeal and flour, which produces
