These are made like Ballymaloe brown yeast bread but baked in muffin tins. Sprinkle seeds on top or leave plain to serve with smoked salmon and cream cheese or with marmalade for breakfast.
Lightly grease a muffin tin (approx. 25cm wide × 32cm long × 2.5cm deep) with sunflower oil.
Sponge the yeast in 150ml of the tepid water with the teaspoon of treacle. Leave in a warm place for about 5 minutes for the yeast to become active. It should be creamy and slightly frothy on top.
In a large, wide mixing bowl, combine the flours with the salt. Make a well in the centre.<
