This is particularly delicious with salami or cured meats. The quantity of caraway seed will depend on the freshness of the spice.

Ingredients

  • 25 g fresh yeast
  • 400 g tepid water
  • 350 g

Method

Crumble the yeast into the tepid water and leave it for about 5 minutes, until it’s creamy and slightly frothy on top.

Mix the flours, caraway seeds and salt in a large, wide bowl. Add the liquid yeast with a little more tepid water if necessary to make a soft but not sticky dough. Add the butter gradually, kneading until smooth – this should take 8–10 minutes by hand or 5 minutes in a
