Pizza is brilliant for a barbecue, though you’ll need a Weber-type grill with a cover and a flat grid. Top with seasonal flavours of your choice.

175 g mozzarella cheese, grated

Method

Preheat the barbecue.

Put the grated mozzarella in a bowl and drizzle with some of the extra virgin olive oil.

Shape or roll the pizza dough into a 30cm rectangle or a large circle about 5mm thick (for tips on how to stretch or roll the dough). Brush the edges with extra virgin olive oil.
