Sfinciuni

This speciality of Palermo is what one might call a pizza pie – dough on the top and bottom and a chosen filling in the centre. There’s nothing to prevent you from experimenting, but this is one of the many versions that we enjoy. There’s also a Sicilian version of sfinciuni that’s more like a focaccia with a tomato- and anchovy-based topping.
