Super-easy to make – no oven needed, just cook the thin dough on a griddle or heavy cast iron frying pan. They are delicious spread with cream cheese mixed with fresh herbs, perhaps a slice of prosciutto, smoked salmon or cooked ham, some charcuterie or slivers of hard cheese or a few slices of ripe tomato. Roast aubergine and red peppers also make a delicious topping either on their own or with cream cheese. Piadina sandwiches are much loved in Italy, particularly in Florence.
