Lavash is an ancient flatbread that is still made all over the Caucasus. It is traditionally cooked in a tandoor or tonir oven (an underground clay oven) or on a convex metal griddle known as a saj.

Some versions are unleavened but most contain yeast or ‘old dough’, where a little ball of each batch is kept aside and added to the next dough to inoculate it (a form of sourdough).
