Injera is an Ethiopian and Eritrean spongy flatbread made from teff, the world’s smallest grain. Teff flour is highly nutritious and naturally gluten-free. You can get teff flour in health food shops, but if you can’t find it, buckwheat flour works well. Teff has a slightly sour flavour that becomes addictive.
