Khobz, or kesra, is a soft yeasted flatbread eaten across North Africa. It puffs up when baked and can be filled with vegetables, used as a wrap for shawarma or as a dip with hummus. The name means ‘home bread’, as it’s commonly homemade or cooked in a street oven, called a ferrane, and is eaten at virtually every meal.
