India has a myriad of flatbreads. These roughly triangular flaky breads are eaten all over the country. They are easy to make at home – all you need is a cast iron frying pan. In India, ghee is often used instead of oil. The paratha can be round or square rather than a rectangle. Laccha paratha, Kerala paratha or porotta are made from maida or plain flour and are much flakier.
