It’s fascinating to watch chapatis being cooked in India – it looks so easy. Originally chapatis were cooked over charcoal but you’ll need a gas hob for this.

Ingredients

  • 250 g sieved chapati flour or wholemeal flour
  • pinch of salt
  • 175 m

Method

Put the flour in a bowl and add a pinch of salt. Pour in the water and gradually bring in the flour to form a soft dough. Knead the dough for 5–6 minutes, until it’s smooth. Put the dough in a bowl, cover with a damp cloth and leave for 30 minutes to relax.

Heat an Indian tava or a cast iron frying pan over a medium-low gas heat for 10 minutes. When it’s very hot, turn the heat to low.<
