Chinese Steamed Buns

Sitting on the steps of a café late one evening in Guatemala while visiting the Mayan ruins of Tikal, I got chatting to a Chinese-American woman who had fond memories from when she was little of helping her grandmother make Chinese bread in a bamboo steamer over a wok. Her family had long since lost the recipe, but as we sat talking, she explained how they made the dough. It seemed similar to our white yeast dough but cooked in a steamer over a wok.
