Damper, also called bush bread, was the staple bread of the Australian settlers, made from just three ingredients and usually cooked over an open campfire, either in the embers or in a pot oven with hot coals on top as well as underneath. It was eaten slathered with butter and golden syrup (called Cocky’s Joy in Australia).

Preheat the oven to 220°C/430°F/gas mark 7.

Sieve the flour and salt into a wide bowl. Make a well in the centre, pour in the milk (or milk and water) and mix until it comes together into a dough. Turn out onto a floured board. Tidy around the edges to form a round, then flip i
