Damper, also called bush bread, was the staple bread of the Australian settlers, made from just three ingredients and usually cooked over an open campfire, either in the embers or in a pot oven with hot coals on top as well as underneath. It was eaten slathered with butter and golden syrup (called Cocky’s Joy in Australia).
