Kouign-amann, an unusual favourite, is a multi-layered Breton pastry made with laminated dough with lots of butter and sugar.
Roll the dough out until it’s 0.5cm thick, 23cm wide and 30.5cm long. Sprinkle 100g of the caster sugar onto the dough, fold it into three and roll it out again into the same width and length as above. Use a ruler or a 7.5cm square cutter to cut out squares. You should get approx. 12 in total (three across and four down).
