Gingerbread

Elizabeth Mosse of Bennettsbridge, County Kilkenny, was the mother of the hugely talented Mosse family – potter, wood-turner, painter, sculptress, a gardener. Bennettsbridge House was always a warm, welcoming house and Elizabeth always had a cake and some biscuits in the tin. Once, when we arrived unexpectedly, we enjoyed this gingerbread, warm from the oven and slathered with butter, and of course she shared the recipe.
