I have always loved this moist, rich, tasty banana bread. It keeps for up to two weeks in a tin, but I doubt you will find this out as it will be gobbled up quickly. Serve it thickly sliced and spread with soft butter.

Ingredients

  • 225 g self-raising flour
  • ½ level teaspoon salt
  • 110 g

Method

Preheat the oven to 180°C/350°F/gas mark 4. Line a 24cm × 13.5cm × 5cm loaf tin (or four small loaf tins, approx. 14.6cm × 7.6cm) with greaseproof or silicone paper.

Sieve the flour and salt into a large, wide mixing bowl, then rub in the butter. Stir in the sultanas or seedles
