This wonderful sweet bread can be baked in a loaf or as cinnamon buns. When we make this bread, the scent of warm bread mixed with spice always entices people to the kitchen. It’s a battle to keep the bread long enough to let it cool. We serve it sliced thickly. If by some miracle you have some left the next morning, it’s great toasted.
In a small bowl, crumble the yeast into 65ml of the tepid water, sprinkle on a pinch of granulated sugar and leave to sponge for about 5 minutes. It will have a creamy, slightly frothy appearance on top.
