Many people in Ireland would originally have associated sticky buns with a small chain of Quaker cafés called Bewley’s. Initially they were operated on an honour system – a plate of buns was put out on the table and people ate to their heart’s content and then (hopefully) paid for everything they’d eaten. The recipe below makes a basic bun dough that can be used to make many variations: doughnuts, Bath buns, Chelsea buns, hot cross buns, and so on.
