Get double value from vanilla pods by storing them in caster sugar. You can even reuse a vanilla pod after it’s been used to infuse milk or cream, but it will have less flavour after each use, especially if the seeds have been scraped out.
Fill a large-mouthed jar with caster sugar. Bury dry vanilla pods in the sugar to store – the more vanilla pods you use, the stronger the flavour. Use for biscuits, cakes, custard, ice creams, etc.
