Lard is made from pig fat rendered slowly in the oven. Don’t bother making lard unless the pig is at least free range, and better still, organic. The best lard is made from the back fat and also the flare fat from around the kidneys.
To render fat into lard, chop up the pig fat and put it in an ovenproof dish or roasting tin.
