For a different cupcake experience, use the batter and frosting recipes from the previous pages to make inside-out cupcakes, which we call doodles.


The Batter

When you make cupcakes, you try to achieve a top that’s nice and flat. When you make doodles, which aren’t frosted, you want them to be more rounded. To do that, I cook them in a hotter oven but for a shorter time. So it’s just the cooking that’s different.

Chocolate Doodles

170°C (325°F/Gas 3) for 23 minutes.

Vanilla Doodles

170°C (325°F/Gas 3) for 24 minutes.

Matcha Doodles

170°C (325°F/Gas 3) for 24 minutes.

The Frosting

Once the doodles have cooled, make holes in the middle of the top using a chopstick or rod. Fill a piping (icing) bag fitted with a plain nozzle with frosting and fill the inside of the doodles.
