For a different cupcake experience, use the batter and frosting recipes from the previous pages to make inside-out cupcakes, which we call doodles.

Method

The Batter

When you make cupcakes, you try to achieve a top that’s nice and flat. When you make doodles, which aren’t frosted, you want them to be more rounded. To do that, I cook them in a hotter oven but for a shorter time. So it’s just the cooking that’s different.
