One of the most popular dishes in Japan, tamagoyaki is a multi-layered omelette and a bento box favourite. It can be eaten on top of sushi, on its own as a snack or as a side dish as part of a Japanese or Nikkei meal. Don’t be put off by the techniques required to make this dish – as with crêpes, practice makes perfect, and once you get the hang of it, you’ll be hooked. Here I give a recipe for a basic mixture, and use it to make three versions – plain, with foie gras and with crab.
