Aji rocoto is a native Peruvian chilli with an intense heat; it’s found in many guises – ground and used as a spice in sauces and soups, as a hot sauce served at the table or as a paste to flavour dishes, as in this recipe.

Palm hearts are one of the most popular foods in Brazil, and are eaten fresh in salads and pastries. In the UK and US, you can find them in jars or tins in South American shops or in larger supermarkets. I recommend using the jarred variety and avoid the t
