The Brazil nut, which technically is a seed not a nut, does actually come from Brazil, hailing from the Amazonian state of Pará in the far north of the country, where oddly enough it is known as the Pará nut.
Luckily I am not lactose intolerant, but many Asian diners at my supper club are; so, I devised this recipe with them in mind. The Brazil nut milk has a delicious flavour of the seed; it is thick and creamy and makes an ideal partner for the truffle dashi and shiitake mushrooms
