In Japanese, tataki refers to the technique of searing the outside of the fish or meat, while keeping the flesh juicy and semi-raw. For this dish to work, you will need the best quality tuna you can get hold of, and time is also of the essence. The tuna blocks should be seared in a smoking hot pan for only a few seconds on each side, before being plunged into the chilled truffle ponzu dressing.
