If you decide to make your own dulce de leche, this will need to be done ahead of the ice cream. So, remove the label from an unopened tin of sweetened condensed milk, place it in a pan with plenty of water (the water should always come up as high as possible up the side of the tin, so check periodically) and simmer for 2–3 hours – the longer it simmers, the more fudge-like the dulce
