Yuzu kosho is a salt-cured condiment made with yuzu citrus peel, chillies and salt. It’s intensely fragrant and hot with a deliciously zesty undertone; it works excellently with grilled meats. Yuzu kosho originates from the westernmost Japanese island of Kyushu, an area that has traded with Korea and Southeast Asia for centuries; a connection that has produced some interesting cross-cultural influences, such as the alcoholic spirit shochu, as well as yuzu kosho.
