One of the major sauces of Peruvian cooking, Huancaína (pronounced, wan-kay-eena) sauce is usually served alongside sliced potatoes as in the popular Peruvian dish Papas a la Huancaína. It is made with aji amarillo chilli, evaporated milk and fresh cheese, so should be deliciously creamy with a kick of heat. I love serving it with potatoes or other vegetables, meat and fish and also as a pasta sauce.
