This sauce is a fresh mayonnaise flavoured with rice vinegar and Chinese tobanjan, or chilli bean paste, and crispy chilli oil. You can use it as a topping for grilled (broiled) seafood sushi, or more broadly on any grilled (broiled) fish or seafood dish; its name is a nod to the Chinese (‘Chifa’) community of Peru.
