A classic of Japanese cooking, this dressing or sauce can be used to flavour green vegetables or served as a dipping sauce for Japanese hotpots (hotchpotches) among other things.

  • 90 g ( oz/ cup) white sesame seeds

Method

Dry-fry the white sesame seeds in a heavy frying pan (or skillet) over a medium heat until lightly golden; this should only take a few minutes. Shake the pan constantly and use a wooden spatula to stir the seeds as they brown. Be watchful as the sesame seeds can go from golden brown to burnt in just a few seconds; if they burn, you should discard them as they will make the goma-dare dressing bi
