This condiment is very easy to make, it takes just a little planning to prepare. This powder adds tonnes of natural umami flavours when dusted over tiraditos, as a coating for inside-out sushi or as a seasoning for small eats, such as Pimientos de Padrón Nikkei.

Ingredients

  • 120 g (4 oz/½ cup) red miso (you could use brown miso for a milder flavour)

Method

Preheat the oven to 70°C/158°F/gas mark ¼, and place a silicone mat or a sheet of non-stick baking parchment on a baking tray (baking sheet).

Using a palette knife or scraper, spread the miso as evenly and thinly as possible over the mat.
